Sweets
Desserts are a constant temptation calling us to the 'Dark side'.
So an ocassional healthy treat can do great things for our state of mind.
The problem is that we all know the shortcomings of most 'healthy' treats.
They don't quite meet our expectations.
Here are two good, and I mean good, sweet recipes
Recipes
Buckwheat Waffles
These are the best waffles I've ever had. And I'm not just saying
that because it's my recipe. Ask anyone who has had them. I usually make
three times the recipe and freeze them in 2 waffle packets.
(They're even good frozen)
Ingredients:
- 1/2 cup buckwheat flour
- 1 1/2 cups whole wheat pastry flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 eggs separated
- 2 cups Rice Dream
- 2 Tablespoons Vanilla
- 1/4 cup Maple Syrup
- 1/4 cup Olive Oil
Directions:
- Mix all the dry ingredients (flour, baking powder, salt)
- In different bowl whisk egg yolks, rice dream, maple syrup, oil.
- Whip egg whites. Careful not to overwhip they should be soft peaks.
- Now combine both bowls of ingredients until smooth.
- Fold in egg whites. It's best to use a rubber spatula.
Do not whisk at this point.
- pour into well seasoned waffle iron for about 90 seconds.
Rice Pudding
This is an easy easy recipe, It takes
4 hours to cook. It is, however, worth the wait.
Ingredients:
- 1 cup short grain brown rice
- 1 1/2 quarts Rice Dream
- 1/4 Cup Maple Syrup
- 2 Tbl Spoons Vanilla
- 1/2 teaspoon salt
- 1/2 teaspoon cardamom (optional)
Directions:
- Wash rice
- Combine all ingredients in a pot
- Bring to a boil and then reduce flame to as low as possible
- Stir every 15 minutes. (it is more important to watch this more
closely as time goes by,
as you run the risk of cooking off the milk and burning
the rice.
If it does get dry add some water.
Top with cinnamon and serve warm or cold.
You can also try adding some cardamom.
